With Vivienne Bolton Today's Recipe: Fish and Fennel Bake I found some lovely little fennel bulbs this week so I've combined them with the new potatoes and about 250g of white fish and it makes a tasty fish supper for two. Served with some early vegetables and a couple of glasses of something dry and white we enjoyed a warming meal - and with all the rain we are having we certainly needed it! Ingredients: 500g new potatoes, scrubbed and quartered Scrub and quarter the new potatoes and place in a saucepan. Slice the fennel. Cover with water and bring to the boil, once the potatoes are bubbling, add the fennel slices and a sprinkling of salt. Turn down the heat and simmer until the potatoes are quite cooked. Remove from the heat, drain the potatoes and place in an oven dish. (Save the cooking water) Splash a couple of teaspoons of olive oil (or butter) in a saucepan, add three teaspoons plain white flour and create a roux, add the milk, stirring constantly until the mixture thickens, add the wine, keep stirring. Stir in the crème fraiche and season with salt and pepper. Chop up the chervil and spring onions and add about a tablespoon to the sauce. Finally cut the fish into bite sized pieces and add to the sauce, simmer very gently for a few minutes. You might need to add a little of the potato and fennel cooking water to thin the sauce a little. Tip the sauce and fish over the potatoes, gently toss to mix. Bake for 20 minutes as 180 C.
Remove from the oven, sprinkle with more chopped chervil and fennel fronds if you have them. Serve with green vegetables and some lovely bread and, it goes without saying, a glass or two of something dry and chilled.
