À Table: Citrus, Artichoke Salad & Cinnamon

According to Patrick Armand of Selectissime Ave Jean-Jaures in Ivry-sur-Seine 94200, a distributor of Sri Lankan cinnamon in France, the spice should always be bought in sticks and the best is a caramel colour. The most subtle flavoured cinnamon — with its fruit and flowery notes — comes from Sri Lanka while that from Indonesia tends to have a stronger flavour.

Salade de topinamours et d’agrumes a la canelle Sri Lanka   –  Citrus and Artichoke Salad with Sri Lankan Cinnamon

Serves 4
Preparation time: 40 minutes
Cooking time: 5 minutes

8 Jerusalem artichokes now on local markets
1 grapefruit
4 plump ripe Algarve oranges now on the markets
100g pistachio nuts
2 sticks of Sri Lankan cinnamon
50 cl oil of almonds
10cl of vinegar
5cl Maple syrup
2 turns of a mill of white pepper
pinch of Salt
Fresh Coriander

Preparing the Cinnamon Vinaigrette

Peel and quarter three of the oranges and other citrus fruits with a sharp paring knife. Squeeze the fourth orange and put the juice aside.
In a small casserole reduce the nixed cider vinegar and maple syrup for four mins over a medium heat until it is very syrupy. Off the heat add the orange juice, bring the mixture to the boil and then again off the heat add cinnamon sticks that have been cut in strips along their length,  the salt, the pepper and the almond oil. Leave it all to infuse.

Preparing the Artichoke Salad

Clean and scrape the artichokes,then fine mince them quickly to avoid oxidisation, add them to the Vinaigrette and to this add the diced citrus and pistachio nuts that have  previously been roasted in a frying pan.
Dress the dish with sprigs of coriander.
