From the Food-hall: Pecorino Pasta and Rapini   – Linguines au pecorino et aux rapinis  

Pecorino: Not a French but an Italian goat milk cheese nevertheless an evergreen favourite with French fromagers. Bruno Deslandes of Au Bom Fromage, marche de la Chapelle, 10, rue de l’Olive. 75018 Paris  says the cheese has the Italian equivalent of an AOP or protected brand label. He proposes Percorino Pepato which he says is widely used in cooking, grated over risotto, or into soups, to cover gratin dishes and in pizzas.When young he says, this dense and compactly textured cheese breathes a milky aroma. This become more intense, animal-like and peppery as the cheese ages (around 12 months).

Pecorino Pasta and Rapini   – Linguines au pecorino et aux rapinis 

Serving (s): 4
Preparation: 10 min
Cooking time: 12 min

1/2 lb (8 oz) rapini (also known as broccoli rabé or broccoletti)
1 lb (500 g) linguine
2 c. tablespoons (30 ml) olive oil
2 c. tsp (10 mL) crushed black peppercorns
1 clove garlic, minced
1/2 cup (125 mL) grated pecorino cheese
salt

PREPARATION
1. In a saucepan of boiling salted water, blanch the rapini until they are tender but still crisp, for about 3 minutes. Drain and chill under cold water; drain well. Chop and set aside.
2. Dip the linguine in a large pot of boiling salted water and cook until al dente,  from 8 to 10 minutes. Drain, setting aside 1/2 cup (125 ml) of the water used in cooking .
3. While pasta is cooking, heat the oil in a skillet at a medium heat, sauté the pepper, garlic and a pinch of salt long enough to bring out the flavour —  about 2 minutes. Add the rapini, increase the heat and sauté everything until rapini is tender — about 3 minutes. Add this to the cooked pasta and top with grated cheese. Add enough of the previously saved water to moisten the cooked pasta, reheat.
