À Table: Sea Bream and Capers




From the Food-hall: Sea Bream and Capers   – Filets de dourade en câpres

Câpres: Jose da Rosa of Epicerie da Rosa, 19 bis, rue du Mont Thabor 75001 Paris recommends câpres or capers direct from Murcia in southern Spain which he claims produces some of the best capers on the market. They are he adds the ideal ingredient to enhance  grilled sea bream.  Capers says Jose da Rosa are replacing cornichons or savoury gherkins as a garnish in some regional cooking.

Sea Bream and Capers   – Filets de dourade en câpres

Serving: 2

Preparation: 5 min
Cooking time: 12 min

4 fillets of sea bream
2 tablespoons capers
1 clove garlic or garlic frozen
12 cherry tomatoes
olive oil
salt and pepper
Fresh lemon juice 

PREPARATION

Sprinkle the bottom of a baking dish with 1 tablespoon of olive oil and evenly distribute it to c over the bottom of the dish.  Sprinkle capers, garlic previously fine-chopped with cherry tomatoes onto the olive oil. 

Put the garnished dish into the oven preheated to 200 ° C (thermostat 6-7) for about 10 minutes.
Remove the dish  and lay the  fillets onto the capers and garlic, squeeze lemon juice over the fish. Drizzle fish and tomatoes with  olive oil.
Add salt and pepper to taste.
Bake for 12 min. Serve with rice.
