From the Food-hall: Suckling pig and Fritters- Cochon de lait et beignets

Cochon de lait: Roger Yvon, a Paris butcher at Boucherie de Varenne,33,rue de Varenne, 75007 Paris says the younger the suckling pig, the more tender and pink its meat is, and  sucklings are less fatty than other pork. The suckling pig, at its freshest when its eye still sparkle, is best roasted whole on a spit, he says.

Suckling pig and Fritters- Cochon de lait et beignets
Serving: 4

Preparation: 30 min
Cooking time: 3 hours

2 deboned shoulders of suckling pig
4 tbsp. tablespoons of mountain honey
4 tbsp. tablespoons sherry vinegar
4 tbsp. of  meat gravy
1 carrot
1 onion
2 cloves garlic
salt and pepper

Fritters Savoyards
1 kg potatoes
20 cl of white wine
4 c. tablespoons chopped parsley
100 g grated Beaufort cheese
15 cl of crème fraîche
1 egg
salt, pepper, nutmeg

PREPARATION

Add the aromatic vegetables to the shoulders of pork  , sauté for 10 minutes. Place dish covered in oven at gas mark 6  for 3 h. Uncover. Coat  the pork in honey. Bake at gas mark 6. Glaze with vinegar, add  gravy, reduce liquid by half. Remove dish. Strain the juice  and serve. 

Fritters:
Peel, wash  and grate potatoes. Add salt and pepper and let drain 10 minutes. Squeeze and drain. Mix with white wine, crème fraîche, chopped parsley, egg, Beaufort cheese, nutmeg. Shape the fritters. Pan fry in oil at 170 ° C  turning frequently.
Drain on absorbent paper.
