À Table: Going French Vegetarian




From the Food-hall: Carrots and Coriander – Beignets de Carottes à la Coriandre 

Beignets de Carottes : Cyprus is home to Halloumi cheese made with fresh mint leaves and sheep’s milk although commercial producers mix in goat and cow milk.  Andreas Mavrommatis , a Paris cheesemonger at Epicerie Mavrommatis 47 rueCensier, 75005 Paris says Halloumi is basic to the recipe offered today. The cheese when made in traditional fashion and from its Pitsilia origins is delicate and it tastes best when its made from sheep’s milk he says.

Carrots and Coriander  – Beignets de Carottes à la Coriandre

Serving: 2
Preparation: 15 min
Cooking time: 10 mins
Ingredients:

250 gms Halloumi  cheese
4 large carrots
 new onions chopped
1 bunch of fresh chopped coriander
1 tablespoon of grilled and ground coriander seeds
20gms of chick pea flourordinary if unobtainable)
2 beaten eggs,
2 tablespoons of  olive oil from Provence
A handful of rocket leaves

4 tablespoons of lemon juice made as follows: half a peeled garlic clove , 1 tablespoon sweet honey, 1 tablespoon mustard,  juice and zest of a grated lemon, 90ml of olive oil, salt and pepper all well stirred.

PREPARATION

The Beignets de Carottes

Roughly grate 50g of Halloumi  cheese, mix in the grated carrots, cut rest of cheese into slices and set aside, add all other ingredients to the carrot-cheese mix, pepper and salt very lightly, mix well.  Shape the mix into 12 flat patties and place in fridge for 20 minutes.

Cooking the dish

Heat the olive oil in a frying pan, fry the  Beignets for 2 mins on either side until golden brown. Keep them hot in the oven while frying the slices of Halloumi cheese for 1 or 2 mins on either side (without adding more oil). Ensure the slices are golden brown and crusty.

Plating
Pile the Beignets on a plate interleaved with cheese slices. Decorate the “cheese burger” with rocket leaves and cover it with your lemon sauce.
