From the Food-hall: Garlic and Cherry Tomato Pizza –  Pizza Ail et Tomate cerise

Pizza Ail et Tomate cerise:  Juicy sweet fresh cherry tomatoes, the Jardin de Rabelais variety are best, for this recipe. When fully ripe and with their sugar level at its highest, they taste superb, according to Jean Pierre Bloemmaert, greengrocer at Les Halles Gosselin, 40 rue ae l’Annonciation, 75016 Paris. So time to whip up a light easy-to-prepare summer pizza.

Preparation: 20 min
Cooking time: 15 mins

Ingredients:

280g pizza pastry base
10-12 Sweet Cherry Tomatoes
1 fresh La Violette de Toulouse garlic head
3-4 tinned anchovy filets in olive oil
Olive oil
Fleur de sel (hand-harvested sea salt)
Fresh parsley leaves from the herb garden
Celery salt

PREPARATION

Garniture
Wash and finely chop the fresh parsley. Peel the garlic and wash the tomatoes. Chop the tomatoes into quarters, mix with the garlic, fleur de sel and some of the anchovy filet oil. Flour a chopping board and roll out the pizza base making it as fine as possible. Heat this base in an lightly olive-oiled frying pan on a medium heat for a few minutes, remove from hotplate.

Cooking the pizza
Thinly spread a little olive oil over the pizza base and cook in the pre heated oven for 10 minutes at 250 degrees. Spread the cut tomatoes and garlic over the base,  and put it back in the oven for 5 minutes, the crust should now be golden brown and crisp. Remove from oven and spread the anchovies as a topping on the tomatoes , sprinkle with chopped parsley and olive oil. Serve hot.
