From the Food-hall: Crab flambé in absinthe and fennel–  Homards  flambé à l’Absinthe, fenouil au citron

Crab flambé in absinthe and fennel:  Thomas Brachet of The Beef Club, 58 rue Jean-Jacques Rousseau, 75001 Paris recommends very fresh live Brittany crabs for this recipe. He says the Brittany crab offers a concentrated flavour of the sea while its firm flesh holds its texture well during cooking.

Serving: 6

Preparation: 20 min
Cooking time: 15 mins

Ingredients:

3 Blue Brittany crabs 600-800g each
Absinthe
Thyme
Espelette peppers
Green aioli
2 egg yolks
2 Garlic cloves
20cl Provence olive oil

Fennel in lemon:
6 white fennel
Bunch of fresh dill
1 lemon
10cl olive oil

PREPARATION CRAB

Remove the claws and plunge them into boiling water for two minutes then remove shell and take out the meat. Cut the body of the crab in half along its length. Replace the claw meat in the emptied head of the crab and season with olive oil, Espelette peppers, fleur du sel, and thyme. Grill the two halves of the crab for five minutes. Cover it with the liquid from the cooking and the heated absinthe, then flambé for a minute.

Fennel in lemon
Cut the fennel into strips and fry it briefly in olive oil then grill for three minutes on each side. Add chopped dill, lemon zest, lemon juice and olive oil.

Green aioli
Crush the garlic, add the egg yolks and mustard, mix with olive oil, season with salt and pepper.
