From the Food-hall: Curry de Patates Douces et d’Épinards – Sweet Potato and Spinach Curry

Laurent Bertholin of Maison Bertholin, Marche couvert de Passy 75016 Paris says the more colourful these potatoes are the sweeter and more sugary they will taste. For best flavour they should be a rosy, reddish-orange which shows the best level of their sugar content. Sweet potatoes are rather more floury than other varieties and this is a feature for this recipe. The sweet potato does not grow well in France and those on the markets come from Spain and Portugal where climates are more favourable.

Preparation: 30 mins
Cooking time: 25 mins
Serves 4

Ingredients:

1 tablespoon olive oil
2 sliced large red onions
2 sliced large cloves of fresh garlic from the Lot
1 tablespoon grated fresh ginger
2 finely sliced green peppers
1 tablespoon ground cumin
1 tablespoon ground fresh coriander or in powder form
1 tablespoon turmeric powder
1 tablespoon black mustard seeds
800g sweet potatoes
375 ml of vegetable stock
150gms fresh spinach
1 large bunch of fresh coriander
1 tablespoon grilled chopped almonds
Salt

Curry preparation:
In a frying pan heat the olive oil on a medium flame. Add onions, garlic, ginger and peppers. Fry gently for 4-5 minutes. Add all the spices shown above and stir well. Add the diced unpeeled sweet potatoes and the vegetable stock.
Cooking: Leave the mixture to simmer on a low flame for 15-20 minutes. Add the chopped spinach leaves and salt. Let the mixture simmer for further 2 to 3 minutes. Remove from heat and add finely chopped fresh coriander and the almonds. Serve with green vegetables or a salad.
