À Table: Côte de Veau au Tilleul at au poivre vert –Veal Cutlet with Limewood

The veal sold by Michel Lemoine of Boucherie Lemoine, 35 Rue de Chézy 92200 Neuilly sur Seine, Paris comes from the Dordogne where he carefully selects a hand-reared Limousin breed for its taste. The calves used are fed on pure fresh milk which he says, gives the meat a fine delicate sweet flavour with the texture of silk.

Preparation: 20 mins
Cooking time: 15 mins
Serves 6

Ingredients:

2 veal cutlets 600g each
20g fresh lime tree leaves
20g of fresh green pepper in grains
100g semi-salted butter
3cl of groundnut oil
5cl veal gravy
salt and pepper to taste

Preparation:
Have the butcher tenderise the cutlets, trim and save cut-offs and tie cutlets with string. Thirty minutes before cooking remove the meat from the fridge and let it reach room temperature.

Cooking:
Heat the oil in a pan then add the cutoffs and lightly brown the already seasoned veal on both sides for 3 mins.  Add the butter the lime tree leaves and the fresh pepper. Cook all for 8-10 minutes each side frequently basting with more butter. Remove cutlets from pan and leave to stand for ten minutes in a warm zone. Remove the leaves and juices, set aide and rinse the pan with two tablespoons of water adding this mix to the saved gravy. Pass the gravy through a strainer, add more green pepper   Reheat the cutlets, plate them with fresh lime tree leaves and cover with gravy.
