Vinaigrette au fromage blanc Cheese Vinaigrette250g fromage blanc
15ml olive oil
50ml Barolo vinegar
Salt and pepper
1. Start with light vinaigrette. Put a little salt in the vinegar and whisk it with the fromage blanc. Add the olive oil, juice of half a lime and a few drops of soy sauce. Add salt and pepper. Whisk. Taste and adjust the seasoning.
2. Take lettuce heart leaves, cut them in two. Dribble with some dressing. 3. Slice the mozzarella into sticks. Cut lobster (or shrimp) into pieces lengthwise. Cut the cherry tomatoes in halves. 4. Take two rice leaves and soak them in warm water to soften.Remove excess water by placing them on a cloth. 5. Spread but do not cut the roll. Place the two rice leaves on the roll . 6. Now to fill the rolls. Place on the lower sheet -lettuce leaves in length, add mozzarella, tomatoes, coriander, a little Espelette pepper, lobster slices, and again more lettuce and coriander. 7. Roll up the rolls using the cling film as shown in the video, tighten the roll. 8. Cut the roll into equal pieces and remove the cling wrap (do not cut the rice paper!). Add a little dressing on the side.
